BRINE BLACK OLIVES – WHOLE AND PITTED OLIVES:
The AGRESTIS brine black olives “Tonda Iblea”, are picked up in January and February, one after the other, and put in suitable containers the same day.
They are manually selected and brined producing an excellent taste of tomato, thyme and sage. These olives have a very thick and plentiful pulp and their taste is unique, lightly bitterish, delicate and appetizing.



BRINE GREEN OLIVES – WHOLE, PITTED AND PRESSED OLIVES:
The AGRESTIS brine green olives “Tonda Iblea” and the other excellent “Nocellara dell'Etna” cultivar, are picked up in August and September, one after the other, and put in suitable containers the same day. They are manually selected and brined so that they acquire the scent of sour tomatoes, light spiced herbs as thyme, wild fennel and laurel. These olives have a very thick and plentiful pulp and their taste is unique, lightly bitterish, delicate and appetizing.
